Baked Eggplant
Ingredients
- Eggplant Peeled and sliced into 1/2 inch slices
- Mayonnaise For coating
- Bread Crumbs For coating
Instructions
- 1Preheat oven to 350°.
- 2Line a baking pan with foil.
- 3Place bread crumbs in a shallow dish.
- 4Coat each slice of eggplant on both sides with mayonnaise.
- 5Press into bread crumbs to coat.
- 6Place coated eggplant slices on prepared baking sheet.
- 7Bake for 20 minutes in the preheated oven, until golden brown.
- 8Flip slices over, and cook for an additional 20 to 25 minutes to brown the other side.
