Baked Eggplant

Ingredients

  • Eggplant Peeled and sliced into 1/2 inch slices
  • Mayonnaise For coating
  • Bread Crumbs For coating

Instructions

  1. 1Preheat oven to 350°.
  2. 2Line a baking pan with foil.
  3. 3Place bread crumbs in a shallow dish.
  4. 4Coat each slice of eggplant on both sides with mayonnaise.
  5. 5Press into bread crumbs to coat.
  6. 6Place coated eggplant slices on prepared baking sheet.
  7. 7Bake for 20 minutes in the preheated oven, until golden brown.
  8. 8Flip slices over, and cook for an additional 20 to 25 minutes to brown the other side.
