Banana Walnut Coffee Cake

Ingredients

    Cake Batter

    • 2 Cup All-Purpose Flour
    • 2 tsp Baking Powder
    • ¾ tsp Salt
    • ½ Cup Granulated Sugar
    • ¾ Cup Milk
    • 2 Eggs
    • 1 tsp Vanilla Extract
    • 3 Ripe Bananas
    • ¼ Cup Sour Cream
    • ¾ Cup Butter cold

    Crumb Filling/Topping

    • 1 Cup All-Purpose Flour
    • 2 tsp Cinnamon
    • 1 ½ Cup Walnuts chopped
    • ¼ Cup Brown Sugar
    • ¾ Cup Butter cold, cut into small cubes

Instructions

  1. 1Preheat oven to 350°.
  2. 2Lightly butter, then dust with flour, a 9x13 inch baking dish (or spray with cooking spray).
  3. 3For the cake batter: In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  4. 4In a large bowl, beat butter until smooth. Add sugar, and continue to blend. Add the very ripe bananas and blend until well combined.
  5. 5While mixing add eggs, then vanilla, milk, and sour cream.
  6. 6Add flour mixture and stir until just combined.
  7. 7Pour 1/2 of the cake batter into the prepared pan, and then add a layer of the crumb topping, using a bit less than half of the crumb topping.
  8. 8Pour the additional cake batter on top, using a spatula to spread as needed.
  9. 9Sprinkle the remaining crumb topping over the cake batter.
  10. 10Bake in a preheated oven for 50-55 minutes.
  11. 11For the crumb filling/topping: Cut cold butter into small cubes and set aside.
  12. 12In a medium-sized bowl add brown sugar, flour, and cinnamon. Then add chopped butter and use a pastry blender or fork to combine all ingredients until coarse crumbles form.
  13. 13Add chopped walnuts and stir to combine.
  14. 14Set aside the crumb mixture while you prepare the cake batter.
