Banana Walnut Coffee Cake
Ingredients
Cake Batter
- 2 Cup All-Purpose Flour
- 2 tsp Baking Powder
- ¾ tsp Salt
- ½ Cup Granulated Sugar
- ¾ Cup Milk
- 2 Eggs
- 1 tsp Vanilla Extract
- 3 Ripe Bananas
- ¼ Cup Sour Cream
- ¾ Cup Butter cold
Crumb Filling/Topping
- 1 Cup All-Purpose Flour
- 2 tsp Cinnamon
- 1 ½ Cup Walnuts chopped
- ¼ Cup Brown Sugar
- ¾ Cup Butter cold, cut into small cubes
Instructions
- 1Preheat oven to 350°.
- 2Lightly butter, then dust with flour, a 9x13 inch baking dish (or spray with cooking spray).
- 3For the cake batter: In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- 4In a large bowl, beat butter until smooth. Add sugar, and continue to blend. Add the very ripe bananas and blend until well combined.
- 5While mixing add eggs, then vanilla, milk, and sour cream.
- 6Add flour mixture and stir until just combined.
- 7Pour 1/2 of the cake batter into the prepared pan, and then add a layer of the crumb topping, using a bit less than half of the crumb topping.
- 8Pour the additional cake batter on top, using a spatula to spread as needed.
- 9Sprinkle the remaining crumb topping over the cake batter.
- 10Bake in a preheated oven for 50-55 minutes.
- 11For the crumb filling/topping: Cut cold butter into small cubes and set aside.
- 12In a medium-sized bowl add brown sugar, flour, and cinnamon. Then add chopped butter and use a pastry blender or fork to combine all ingredients until coarse crumbles form.
- 13Add chopped walnuts and stir to combine.
- 14Set aside the crumb mixture while you prepare the cake batter.
