Broccoli Cheese Soup

Ingredients

  • 1 Broccoli Head, rinsed and chopped
  • ¼ Cup Butter
  • 1 Onion Small, minced
  • 1 Garlic Clove, minced
  • ¼ Cup All-Purpose Flour
  • 2 Cup Vegetable or Chicken Broth
  • ½ tsp Salt
  • ½ tsp Black Pepper
  • 2 Cup Milk
  • 2 Cup Cheese Of choice

Instructions

  1. 1Rinse and chop broccoli, reserve
  2. 2Mince onion and chop garlic. Sauté onion in melted butter, about 3 minutes. Add the minced garlic, sauté and cook for one minute. (Medium high heat)
  3. 3Decrease heat to medium. Add ¼ cup flour, stirring constantly until it starts to brown, about 3 minutes
  4. 4Slowly add 2 cups of broth, continuing to stir. Add ½ tsp salt and ½ tsp pepper. Allow to thicken some, then add 2 cups of milk. Bring to a boil and allow to thicken
  5. 5Add the broccoli. Cover pot, turn down the heat to simmer. Simmer until broccoli is tender. About 25 minutes. Add 2 cups of cheese

Notes

Optional: Add 1 cup carrot and 1 cup celery, thinly sliced, to soup
