2Mince onion and chop garlic. Sauté onion in melted butter, about 3 minutes. Add the minced garlic, sauté and cook for one minute. (Medium high heat)
3Decrease heat to medium. Add ¼ cup flour, stirring constantly until it starts to brown, about 3 minutes
4Slowly add 2 cups of broth, continuing to stir. Add ½ tsp salt and ½ tsp pepper. Allow to thicken some, then add 2 cups of milk. Bring to a boil and allow to thicken
5Add the broccoli. Cover pot, turn down the heat to simmer. Simmer until broccoli is tender. About 25 minutes. Add 2 cups of cheese

Optional: Add 1 cup carrot and 1 cup celery, thinly sliced, to soup
