Chicken Rice Casserole

Ingredients

  • 1 tbsp Butter
  • ½ Onion medium, diced
  • 4 Celery stalks, sliced
  • 1 Garlic clove, minced
  • 3 Cooked Chicken Breasts shredded
  • 1 Homemade Cream of Chicken Soup recipe
  • 3 Cup Chicken Stock
  • 1 Cup Long Grain White Rice uncooked
  • ½ tsp Salt
  • ½ tsp Black Pepper

Instructions

  1. 1Preheat oven to 350°. Spray a 9X13 baking dish.
  2. 2Melt butter in skillet. Add onion, celery and garlic and sauté until onion is tender, about 3-5 minutes.
  3. 3Remove from heat and add chicken, cream of chicken soup, chicken stock, rice, salt and pepper in a large bowl.
  4. 4Pour mixture into a prepared pan and cover with foil.
  5. 5Bake for 30-45 minutes or until the rice is tender. Remove foil and bake an additional 10 minutes, until lightly browned.
