Corn, Tomato, and Zucchini Skillet
Ingredients
- 1 ½ Cup Fresh Corn Or 2 ears
- 2 Zucchini Small, sliced into 1/3" rounds
- 2 Roma Tomatoes Small, peeled and chopped
- Grape Tomatoes Small handful, halved
- ½ Bell Pepper Cut into 2-3" matchsticks
- 2 tsp Olive Oil
- Salt To taste
- Black Pepper To taste
- Oregano To taste
Instructions
- 1In a large skillet, warm the olive oil over medium heat.
- 2Add the peppers and sauté for a couple of minutes, until barely softened.
- 3Add the corn and tomatoes; stir to combine.
- 4Season with salt and pepper and continue to sauté for another 1-2 minutes.
- 5Add the oregano, toss well and taste.
- 6Sauté until everything is warm and the vegetables are still crisp and barely tender.
