Corn, Tomato, and Zucchini Skillet

Ingredients

  • 1 ½ Cup Fresh Corn Or 2 ears
  • 2 Zucchini Small, sliced into 1/3" rounds
  • 2 Roma Tomatoes Small, peeled and chopped
  • Grape Tomatoes Small handful, halved
  • ½ Bell Pepper Cut into 2-3" matchsticks
  • 2 tsp Olive Oil
  • Salt To taste
  • Black Pepper To taste
  • Oregano To taste

Instructions

  1. 1In a large skillet, warm the olive oil over medium heat.
  2. 2Add the peppers and sauté for a couple of minutes, until barely softened.
  3. 3Add the corn and tomatoes; stir to combine.
  4. 4Season with salt and pepper and continue to sauté for another 1-2 minutes.
  5. 5Add the oregano, toss well and taste.
  6. 6Sauté until everything is warm and the vegetables are still crisp and barely tender.
