Creamy Chicken and Rice Casserole

Ingredients

  • 3 Cooked Chicken Breasts cooked and shredded or cubed
  • 2 Cream of Chicken Soup cans
  • 2 Cup Minute Rice or quick cooking
  • 2 Cup Chicken Broth
  • 1 Cup Sour Cream
  • 2 Ritz Crackers sleeves
  • ½ Cup Butter melted (1 stick)

Instructions

  1. 1Preheat the oven to 350°. Spray a 9 x 13 baking dish.
  2. 2In a large bowl, mix cream of chicken, broth and sour cream together until everything is incorporated, then spread mixture into a 9 x 13 baking dish. Vegetables can be added to the rice & chicken mix.
  3. 3In a medium bowl, melt the butter, then pour in the crushed Ritz crackers.
  4. 4Spread the cracker mixture over the top of the casserole, then place on middle rack of the oven and bake for 40 minutes.
