Creamy Potato Salad
Ingredients
- 1 ½ lb Potatoes About 6 medium
- 1 ½ Cup Mayonnaise
- 1 tbsp Vinegar
- 1 tbsp Yellow Mustard
- 1 tsp Salt
- ¼ tsp Black Pepper
- 2 Celery Medium stalks (1 cup), chopped
- 1 Onion Medium, chopped (½ cup)
- 4 Hard Boiled Eggs Chopped
- Paprika For sprinkling (optional)
Instructions
- 1Place potatoes in saucepan and cook until tender, drain. Let stand until cool.
- 2Mix mayonnaise, vinegar, mustard, salt and pepper in large bowl.
- 3Add potatoes, celery and onion, toss.
- 4Stir in eggs.
- 5Sprinkle with paprika.
- 6Cover and refrigerate at least 4 hours to blend flavors and chill.
- 7Store covered in refrigerator.
