Creamy Potato Salad

Ingredients

  • 1 ½ lb Potatoes About 6 medium
  • 1 ½ Cup Mayonnaise
  • 1 tbsp Vinegar
  • 1 tbsp Yellow Mustard
  • 1 tsp Salt
  • ¼ tsp Black Pepper
  • 2 Celery Medium stalks (1 cup), chopped
  • 1 Onion Medium, chopped (½ cup)
  • 4 Hard Boiled Eggs Chopped
  • Paprika For sprinkling (optional)

Instructions

  1. 1Place potatoes in saucepan and cook until tender, drain. Let stand until cool.
  2. 2Mix mayonnaise, vinegar, mustard, salt and pepper in large bowl.
  3. 3Add potatoes, celery and onion, toss.
  4. 4Stir in eggs.
  5. 5Sprinkle with paprika.
  6. 6Cover and refrigerate at least 4 hours to blend flavors and chill.
  7. 7Store covered in refrigerator.
