Crustless Spinach Quiche

Ingredients

  • 1 Cup Onion Chopped
  • 1 Cup Fresh Mushrooms Sliced
  • 1 tbsp Vegetable Oil
  • 1 Frozen Chopped Spinach 10 oz package, thawed and well drained
  • ⅔ Cup Ham Finely chopped, fully cooked
  • 5 Eggs Large
  • 3 Cup Muenster or Monterey Jack Cheese 12 oz, shredded
  • ⅛ tsp Black Pepper

Instructions

  1. 1In a large skillet, sauté onion and mushrooms in oil until tender.
  2. 2Add spinach and ham; cook and stir until excess moisture is evaporated.
  3. 3Cool slightly.
  4. 4Beat eggs; add cheese and mix well.
  5. 5Stir in spinach mixture and pepper; blend well.
  6. 6Spread evenly into a greased 9" pie plate (a quiche dish).
  7. 7Bake at 350° for 40-45 minutes or until knife inserted in center comes out clean.
