Crustless Spinach Quiche
Ingredients
- 1 Cup Onion Chopped
- 1 Cup Fresh Mushrooms Sliced
- 1 tbsp Vegetable Oil
- 1 Frozen Chopped Spinach 10 oz package, thawed and well drained
- ⅔ Cup Ham Finely chopped, fully cooked
- 5 Eggs Large
- 3 Cup Muenster or Monterey Jack Cheese 12 oz, shredded
- ⅛ tsp Black Pepper
Instructions
- 1In a large skillet, sauté onion and mushrooms in oil until tender.
- 2Add spinach and ham; cook and stir until excess moisture is evaporated.
- 3Cool slightly.
- 4Beat eggs; add cheese and mix well.
- 5Stir in spinach mixture and pepper; blend well.
- 6Spread evenly into a greased 9" pie plate (a quiche dish).
- 7Bake at 350° for 40-45 minutes or until knife inserted in center comes out clean.
