Easy Chicken and Rice Casserole
Ingredients
- 2 Cup White Rice
- 1 Onion chopped
- 2 Cup Chicken Broth
- 2 Cream of Mushroom Soup cans
- Salt and Pepper to taste
- 3 Bone-in, Skin-on Chicken Thighs large
- 2 tbsp Butter melted
- 2 tsp Dried Thyme
- 1 Garlic clove, finely minced
- 1 tbsp Fresh Parsley chopped, for serving
Instructions
- 1Preheat oven to 350°. Grease 9×13 baking pan.
- 2Place rice and onion into the baking pan. Pour in the broth and soup and stir to combine. Season with salt and pepper.
- 3Place chicken thighs in rice mixture. Brush chicken with butter and sprinkle with thyme and garlic. Season with salt and pepper.
- 4Cover dish with foil and bake for 1 hour. Uncover and bake for 30 minutes more, until the rice is cooked and the chicken is golden.
- 5Top with parsley and serve.
