Easy Chicken and Rice Casserole

Ingredients

  • 2 Cup White Rice
  • 1 Onion chopped
  • 2 Cup Chicken Broth
  • 2 Cream of Mushroom Soup cans
  • Salt and Pepper to taste
  • 3 Bone-in, Skin-on Chicken Thighs large
  • 2 tbsp Butter melted
  • 2 tsp Dried Thyme
  • 1 Garlic clove, finely minced
  • 1 tbsp Fresh Parsley chopped, for serving

Instructions

  1. 1Preheat oven to 350°. Grease 9×13 baking pan.
  2. 2Place rice and onion into the baking pan. Pour in the broth and soup and stir to combine. Season with salt and pepper.
  3. 3Place chicken thighs in rice mixture. Brush chicken with butter and sprinkle with thyme and garlic. Season with salt and pepper.
  4. 4Cover dish with foil and bake for 1 hour. Uncover and bake for 30 minutes more, until the rice is cooked and the chicken is golden.
  5. 5Top with parsley and serve.
