Easy Shepherd's Pie

Ingredients

  • 1 ½ lb Ground Beef
  • 1 Onion Chopped
  • 2 Cup Mixed Vegetables Chopped carrot, peas, corn
  • 3 Potatoes Large
  • 1 Stick Butter
  • ½ Cup Beef Broth More may be needed to keep moist
  • 1 tsp Worcestershire Sauce
  • Salt To taste
  • Black Pepper To taste

Instructions

  1. 1Peel and quarter potatoes, boil in salted water until tender (about 20 minutes)
  2. 2While the potatoes are cooking, melt 1/2 stick of butter in large frying pan.
  3. 3Sauté onions in butter until tender over medium heat. Add carrots with onions and add peas and corn at the end of onions and carrot cooking.
  4. 4Add ground beef and cook until no longer pink. Add salt and pepper and Worcestershire sauce. Add beef broth and cook uncovered, over low heat for 10 minutes, adding more beef broth to keep moist, if necessary.
  5. 5Mash potatoes with the other half of butter stick, season to taste.
  6. 6Place meat mixture in baking dish (9X9) spread mashed potatoes over meat mixture.
  7. 7Cook in a 400° oven until bubbly & cook brown. About 30 minutes.
