Garlic Chicken Stir Fry

Ingredients

  • 1 ⅓ tbsp Oil 1 TBS + 1 tsp
  • 1 Cup Broccoli
  • 1 Cup Mushrooms
  • 1 Yellow Bell Pepper
  • 1 lb Boneless Skinless Chicken Breast
  • Salt To taste
  • Black Pepper To taste
  • 4 Garlic Cloves, minced
  • ¾ Cup Chicken Broth
  • 1 ½ tsp Sugar
  • 1 tbsp Soy Sauce
  • 2 tsp Sesame Oil
  • 2 tsp Cornstarch

Instructions

  1. 1Heat 1 tsp of oil in a large pan or wok over medium high heat
  2. 2Add broccoli, mushrooms, and bell pepper. Cook for 5-6 minutes and transfer it back to the pan
  3. 3Wipe the pan clean, then heat 1 TBS of oil over high heat
  4. 4Add the chicken to the pan. Season with salt and pepper
  5. 5Cook for 3-4 minutes per side, or until chicken is browned and cooked through
  6. 6Lower heat to low. Add the garlic and cook for 30 seconds
  7. 7Add the vegetables to the pan
  8. 8In a small bowl whisk together the chicken broth, sugar, soy sauce, sesame oil, and cornstarch
  9. 9Pour the sauce over the chicken mixture and bring to a simmer
  10. 10Simmer for 1 to 2 minutes until sauce has just thickened
  11. 11Serve with rice
