Garlic Parmesan Stuffed Mushrooms
Ingredients
- 15 Mushrooms whole, stems removed and chopped
- 1 tbsp Canola Oil
- 2 tbsp Garlic chopped
- ½ tsp Salt
- ¼ tsp Black Pepper
- 8 oz Cream Cheese softened
- ¼ Cup Italian Breadcrumbs
- ½ Cup Parmesan Cheese shredded, divided
- 2 tbsp Parsley chopped
Instructions
- 1Preheat oven to 350°.
- 2Cut the stems off each of the mushrooms and finely chop them up, setting the mushroom caps aside for later.
- 3Heat the oil in a pan over high heat. Cook the chopped stems with the garlic, salt, and pepper for about 6-8 minutes, constantly stirring. Remove from heat.
- 4Combine the cooled stems, cream cheese, breadcrumbs, with parmesan, parsley, salt and pepper, mixing until evenly combined. The mixture should be extremely thick.
- 5Space out the mushroom caps evenly on a baking sheet, spray as desired. Spoon a generous amount of the cream cheese mixture on top of mushrooms with a sprinkle of parmesan. Bake for 20 minutes.
- 6Garnish with a sprinkle of parsley, then serve.
