Garlic Parmesan Stuffed Mushrooms

Ingredients

  • 15 Mushrooms whole, stems removed and chopped
  • 1 tbsp Canola Oil
  • 2 tbsp Garlic chopped
  • ½ tsp Salt
  • ¼ tsp Black Pepper
  • 8 oz Cream Cheese softened
  • ¼ Cup Italian Breadcrumbs
  • ½ Cup Parmesan Cheese shredded, divided
  • 2 tbsp Parsley chopped

Instructions

  1. 1Preheat oven to 350°.
  2. 2Cut the stems off each of the mushrooms and finely chop them up, setting the mushroom caps aside for later.
  3. 3Heat the oil in a pan over high heat. Cook the chopped stems with the garlic, salt, and pepper for about 6-8 minutes, constantly stirring. Remove from heat.
  4. 4Combine the cooled stems, cream cheese, breadcrumbs, with parmesan, parsley, salt and pepper, mixing until evenly combined. The mixture should be extremely thick.
  5. 5Space out the mushroom caps evenly on a baking sheet, spray as desired. Spoon a generous amount of the cream cheese mixture on top of mushrooms with a sprinkle of parmesan. Bake for 20 minutes.
  6. 6Garnish with a sprinkle of parsley, then serve.
