Garlic Roasted Potatoes

Ingredients

  • 3 lb Small Red or White Potatoes Cut in ½ or quarters
  • ¼ Cup Olive Oil
  • 1 ½ tsp Kosher Salt
  • 1 tsp Black Pepper Fresh
  • 2 tbsp Garlic Minced
  • 2 tbsp Parsley Minced

Instructions

  1. 1Preheat oven to 400°
  2. 2Cut the potatoes in ½ or quarters and place in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated
  3. 3Transfer the potatoes to a sheet pan and spread out into 1 layer
  4. 4Roast in the oven for 45 minutes to 1 hour until browned and crisp
  5. 5Flip twice with spatula during cooking in order to ensure even browning
  6. 6Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot
