Garlic Roasted Potatoes
Ingredients
- 3 lb Small Red or White Potatoes Cut in ½ or quarters
- ¼ Cup Olive Oil
- 1 ½ tsp Kosher Salt
- 1 tsp Black Pepper Fresh
- 2 tbsp Garlic Minced
- 2 tbsp Parsley Minced
Instructions
- 1Preheat oven to 400°
- 2Cut the potatoes in ½ or quarters and place in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated
- 3Transfer the potatoes to a sheet pan and spread out into 1 layer
- 4Roast in the oven for 45 minutes to 1 hour until browned and crisp
- 5Flip twice with spatula during cooking in order to ensure even browning
- 6Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot
