Homemade Oatmeal Cream Pies

Ingredients

  • 1 Cup Light Brown Sugar
  • 1 Cup Butter Melted
  • ⅓ Cup Molasses
  • 2 tsp Vanilla Extract
  • 2 Eggs
  • 2 Cup All-Purpose Flour
  • 1 tsp Baking Soda
  • 1 tsp Cinnamon
  • ½ tsp Salt
  • 2 Cup Oats
  • Filling

    • ½ Cup Butter
    • 1 tbsp Milk
    • 1 tsp Vanilla Extract
    • 1 Cup Marshmallow Fluff

Instructions

  1. 1Preheat oven to 350°F
  2. 2Mix butter and brown sugar
  3. 3Add molasses, vanilla, and eggs
  4. 4Sift in flour, baking soda, salt, and cinnamon, mix until just combined
  5. 5Add the oats and mix until incorporated. Be careful not to overmix the batter as it might result in tougher cookies
  6. 6Using a ice cream scoop (or about 2 TBS) scoop out cookie onto a baking sheet lined with parchment paper, leaving about 3 inches between each one
  7. 7Bake 7-9 minutes
  8. 8Make the filling by beating all filling ingredients until well combined
  9. 9Once the cookies are cooled, put a spoonful of filling on one cookie, and sandwich it with another
