Kielbasa Veggie Sheet Pan
Ingredients
- 1 lb Baby Red Potatoes Halved and quartered
- 2 Cup Baby Petite Carrots
- 1 Asparagus Bunch
- ½ Yellow Onion Large, thinly sliced
- 1 Kielbasa 13 oz package, sliced into rounds
- 1 tbsp Garlic Minced
- 3 tbsp Vegetable Oil 2 TBS + 1 TBS
- 1 tsp Dried Basil
- 1 tsp Dried Thyme
- 1 tsp Dried Oregano
- 1 tsp Paprika
- ½ tsp Onion Powder
- Salt To taste
- Black Pepper To taste
Instructions
- 1Preheat oven to 400°. Line sheet pan with foil.
- 2In small bowl mix basil, thyme, oregano, paprika, salt and pepper.
- 3Place potatoes and carrots on sheet pan and drizzle with 2 TBS of oil.
- 4Sprinkle half of herb/spice over top, toss until coated evenly.
- 5Bake 20 minutes
- 6Move potatoes and carrot to one side of pan.
- 7Add asparagus, onions, and kielbasa slices to baking sheet.
- 8Drizzle with 1 TBS oil, add remaining herb/spice over top.
- 9Return to oven for 10-15 minutes, until veggies are softened and roasted.
