Kielbasa Veggie Sheet Pan

Ingredients

  • 1 lb Baby Red Potatoes Halved and quartered
  • 2 Cup Baby Petite Carrots
  • 1 Asparagus Bunch
  • ½ Yellow Onion Large, thinly sliced
  • 1 Kielbasa 13 oz package, sliced into rounds
  • 1 tbsp Garlic Minced
  • 3 tbsp Vegetable Oil 2 TBS + 1 TBS
  • 1 tsp Dried Basil
  • 1 tsp Dried Thyme
  • 1 tsp Dried Oregano
  • 1 tsp Paprika
  • ½ tsp Onion Powder
  • Salt To taste
  • Black Pepper To taste

Instructions

  1. 1Preheat oven to 400°. Line sheet pan with foil.
  2. 2In small bowl mix basil, thyme, oregano, paprika, salt and pepper.
  3. 3Place potatoes and carrots on sheet pan and drizzle with 2 TBS of oil.
  4. 4Sprinkle half of herb/spice over top, toss until coated evenly.
  5. 5Bake 20 minutes
  6. 6Move potatoes and carrot to one side of pan.
  7. 7Add asparagus, onions, and kielbasa slices to baking sheet.
  8. 8Drizzle with 1 TBS oil, add remaining herb/spice over top.
  9. 9Return to oven for 10-15 minutes, until veggies are softened and roasted.
