Luscious Lemon Delight
Ingredients
Crust
- 1 Cup All-Purpose Flour
- 1 Cup Pecans ground or finely chopped
- ½ Cup Butter melted
Layers
- 8 oz Cream Cheese
- 2 ½ Cup Cool Whip thawed
- 2 Instant Lemon Pudding small packages
- 1 tbsp Lemon Juice optional - if you like tartness
- 3 Cup Milk
Icing/Decoration
- 1 Cup Confectioner's Sugar
- Pecans finely chopped, for dusting
Instructions
- 1To make the crust: Combine the flour, chopped pecans and melted butter. Make sure the pecans are either ground or finely chopped. This will produce a crust that will hold together nicely. Stir these 3 ingredients until well-blended and crumbly. Press this mixture into the bottom of a 9x13 baking dish. Bake at 350° for 15 minutes.
- 2Add your layers: With electric mixer, mix cream cheese and confectioner's sugar until smooth and creamy. Fold in 1 cup of Cool Whip and spread over crust. Spread slowly if pecans are too coarse the crust may pull apart. Just work slowly to spread the cream cheese layer as best as you can.
- 3Whisk together the pudding packets and milk. Add lemon juice (optional) and continue to stir until thick. Spread pudding over cream cheese layer.
- 4Spoon remaining Cool Whip over the pudding. Sprinkle with a dusting of chopped pecans.
- 5Refrigerate for 4 hours before serving.
