Mexican Wedding Cookies

Ingredients

  • 1 Cup Butter Softened
  • ½ Cup Powdered Sugar
  • 1 tsp Vanilla
  • 2 ¼ Cup Flour
  • ¼ tsp Salt
  • ¾ Cup Walnuts Chopped
  • Powdered Sugar For rolling baked cookies

Instructions

  1. 1Cream together butter and powdered sugar until light and fluffy; stir in vanilla.
  2. 2Whisk together flour and salt, add gradually to butter mixture; stir in chopped nuts.
  3. 3Chill dough if it seems too soft.
  4. 4Form dough into 1 ¼ inch balls and place onto parchment-lined or ungreased cookie sheet.
  5. 5Bake at 400°F for 10-12 minutes or just until the cookies start to turn light golden brown. Remove from oven and allow to cool slightly.
  6. 6While still warm (not hot), roll a few cookies at a time in powdered sugar until evenly coated. Cookies may be rolled in powdered sugar once more after completely cooled to room temperature.
  7. 7Note: Forming into 1-inch balls will increase yield to 48 cookies.
