Oven Fried Chicken
Ingredients
- 3 lb Chicken Approximate weight
- 1 quart Buttermilk
- 2 Cup Flour
- 1 tbsp Salt
- ½ tbsp Black Pepper
- Vegetable Oil Enough to fill pan to 1 inch depth
Instructions
- 1Place the Chicken pieces in a large bowl and pour the buttermilk over them
- 2Cover and refrigerate overnight
- 3Preheat oven to 350°
- 4Combine the flour, salt, and pepper in a large bowl
- 5Take the chicken out of the buttermilk and coat each piece thoroughly with the flour mixture
- 6Pour the oil into a heavy bottom pan to a depth of 1 inch and heat to 360° on a thermometer
- 7Working in batches, carefully place several pieces of chicken in the oil and fry for about 3 minutes on each side or until the coating is a light golden brown (it will continue to brown in the oven)
- 8Don't crowd the pieces
- 9Remove the Chicken from the oil and place each piece on a metal baking rack set on a sheet pan
- 10Allow the oil to return to 360° before frying the next batch
- 11Bake all fried pieces for 35/40 minutes
