Oven Fried Chicken

Ingredients

  • 3 lb Chicken Approximate weight
  • 1 quart Buttermilk
  • 2 Cup Flour
  • 1 tbsp Salt
  • ½ tbsp Black Pepper
  • Vegetable Oil Enough to fill pan to 1 inch depth

Instructions

  1. 1Place the Chicken pieces in a large bowl and pour the buttermilk over them
  2. 2Cover and refrigerate overnight
  3. 3Preheat oven to 350°
  4. 4Combine the flour, salt, and pepper in a large bowl
  5. 5Take the chicken out of the buttermilk and coat each piece thoroughly with the flour mixture
  6. 6Pour the oil into a heavy bottom pan to a depth of 1 inch and heat to 360° on a thermometer
  7. 7Working in batches, carefully place several pieces of chicken in the oil and fry for about 3 minutes on each side or until the coating is a light golden brown (it will continue to brown in the oven)
  8. 8Don't crowd the pieces
  9. 9Remove the Chicken from the oil and place each piece on a metal baking rack set on a sheet pan
  10. 10Allow the oil to return to 360° before frying the next batch
  11. 11Bake all fried pieces for 35/40 minutes
