1Combine mashed potatoes, onions, spinach, cheese, and chopped ham in a bowl.
2Add egg and dill weed, salt, and pepper; mix well with a spoon.
3Stir in flour.
4Form your patties by dusting them with a little flour, so it will not stick to your hands; shape into patties.
5Heat ¼ cup oil in a skillet and add patties cooking on medium heat until browned on both sides.
6Makes approx. 6 patties. Serve with homemade Ranch Dressing.
Notes
For the Ranch Dressing: Whisk together all ingredients and refrigerate for 2-3 hours. Makes about 1¼ cup dressing. Will keep in refrigerator for several days.
