Potato Pancakes with Ham, Cheese, and Spinach

Ingredients

  • 1 Cup Mashed Potatoes
  • ½ Cup Green Onions chopped
  • ½ Cup Baby Spinach chopped
  • ½ Cup Cheddar Cheese shredded
  • ½ Cup Cooked Ham chopped
  • 1 Egg large
  • ½ tsp Dried Dill Weed
  • ½ tsp Salt
  • ¼ tsp Black Pepper
  • 5 tbsp All-Purpose Flour
  • ¼ Cup Oil for frying
  • Ranch Dressing

    • ½ Cup Buttermilk
    • ⅓ Cup Sour Cream
    • ¼ Cup Mayonnaise
    • 1 tsp Dill and Parsley
    • ½ tsp Dried Dill Weed
    • ½ tsp Garlic Powder
    • ½ tsp Black Pepper
    • ½ tsp Salt
    • ½ tsp Dried Chives

Instructions

  1. 1Combine mashed potatoes, onions, spinach, cheese, and chopped ham in a bowl.
  2. 2Add egg and dill weed, salt, and pepper; mix well with a spoon.
  3. 3Stir in flour.
  4. 4Form your patties by dusting them with a little flour, so it will not stick to your hands; shape into patties.
  5. 5Heat ¼ cup oil in a skillet and add patties cooking on medium heat until browned on both sides.
  6. 6Makes approx. 6 patties. Serve with homemade Ranch Dressing.

Notes

For the Ranch Dressing: Whisk together all ingredients and refrigerate for 2-3 hours. Makes about 1¼ cup dressing. Will keep in refrigerator for several days.
