7-up Lemon Cake

Ingredients

  • 1 Yellow Cake Mix 1 box
  • 1 Instant Lemon Pudding 4.2 oz box
  • 1 Cup 7-up
  • 4 Eggs
  • ⅔ Cup Vegetable Oil
  • Glaze

    • 1 ¾ Cup Powdered Sugar
    • 4 tbsp Milk 2-4 tablespoons
    • 1 tbsp Lemon Juice Fresh squeezed
    • 1 ½ tsp Lemon Zest

Instructions

  1. 1Preheat oven to 350°.
  2. 2Lightly grease a bundt pan with non-stick spray.
  3. 3In a large bowl, combine cake mix, pudding mix, 7-up, eggs, and oil and mix together until fully incorporated.
  4. 4Pour mixture into cake pan and place in oven.
  5. 5Bake 35-45 minutes.
  6. 6While cake is baking, prepare glaze by mixing powdered sugar, lemon juice, and zest in a large bowl.
  7. 7Gradually add milk until desired consistency is reached.
  8. 8Remove cake from oven, invert onto serving plate.
  9. 9Let cool completely, then pour glaze over the top.
  10. 10Let glaze set then slice and serve.
