Slow Cooker Garlic Parm Chicken

Ingredients

  • ⅓ Cup Vegetable Oil Plus 2 TBS
  • 2 lb Chicken Thighs 4 pieces
  • Salt To taste
  • Black Pepper To taste
  • 1 lb Baby Red Potatoes Quartered
  • 2 tbsp Butter
  • 5 Garlic Cloves, chopped
  • 2 tbsp Fresh Thyme Freshly chopped
  • Parmesan Cheese Freshly grated, for serving
  • Fresh Parsley Freshly chopped, for serving

Instructions

  1. 1In a large skillet, over med-hi, heat 1/3 cup oil.
  2. 2Add chicken, season with salt + pepper and sear for 3 to 4 minutes.
  3. 3In slow cooker, toss potatoes with 2 TBS oil, butter, garlic, and thyme.
  4. 4Season with salt and pepper.
  5. 5Add chicken toss slow cook on low gently, then cover and cook on high for 4 hours, until potatoes are tender and chicken is fully cooked.
  6. 6Garnish with Parmesan and parsley and serve.
