Slow Cooker Garlic Parm Chicken
Ingredients
- ⅓ Cup Vegetable Oil Plus 2 TBS
- 2 lb Chicken Thighs 4 pieces
- Salt To taste
- Black Pepper To taste
- 1 lb Baby Red Potatoes Quartered
- 2 tbsp Butter
- 5 Garlic Cloves, chopped
- 2 tbsp Fresh Thyme Freshly chopped
- Parmesan Cheese Freshly grated, for serving
- Fresh Parsley Freshly chopped, for serving
Instructions
- 1In a large skillet, over med-hi, heat 1/3 cup oil.
- 2Add chicken, season with salt + pepper and sear for 3 to 4 minutes.
- 3In slow cooker, toss potatoes with 2 TBS oil, butter, garlic, and thyme.
- 4Season with salt and pepper.
- 5Add chicken toss slow cook on low gently, then cover and cook on high for 4 hours, until potatoes are tender and chicken is fully cooked.
- 6Garnish with Parmesan and parsley and serve.
