Spicy Apple Glazed Meatballs
Ingredients
- 1 Egg
- ¼ Cup Milk
- 2 Bread White or wheat, torn
- 3 lb Ground Beef 85% lean
- 4 Garlic Cloves, minced
- ½ tsp Black Pepper
- ¼ tsp Salt
- ½ tsp Cayenne Pepper
- 1 tbsp Vegetable Oil
Glaze
- 1 Cup Apple Juice
- ¼ Cup Soy Sauce
- 3 tbsp Brown Sugar Packed
- 1 ½ tsp Cornstarch
- 1 tsp Ground Ginger
- ¼ tsp Cayenne Pepper
- 6 Green Onions Chopped
Instructions
- 1In a large bowl whisk together egg and milk.
- 2Add bread, let stand 10 minutes, just until the milk is absorbed.
- 3Add beef, garlic, pepper, salt and cayenne pepper. Mix thoroughly.
- 4Shape into 48 1-inch balls.
- 5Heat oil over medium heat. Cook meatballs, half at a time, about 6 minutes per batch, until brown and crusty outside and no longer pink inside.
- 6Transfer to covered dish to keep warm. Drain fat and clean skillet.
- 7For apple glaze: In a small bowl, combine apple juice, soy sauce, brown sugar, cornstarch, ginger, and cayenne pepper.
- 8In same skillet as meatballs were cooked, cook and stir juice mixture until thickened and bubbly (at full boil).
- 9Cook and stir 2 minutes more.
- 10Return meatballs to skillet; heat through and coat with sauce.
- 11Transfer glazed meatballs to serving dish and top with green onions.
