Spicy Apple Glazed Meatballs

Ingredients

  • 1 Egg
  • ¼ Cup Milk
  • 2 Bread White or wheat, torn
  • 3 lb Ground Beef 85% lean
  • 4 Garlic Cloves, minced
  • ½ tsp Black Pepper
  • ¼ tsp Salt
  • ½ tsp Cayenne Pepper
  • 1 tbsp Vegetable Oil
  • Glaze

    • 1 Cup Apple Juice
    • ¼ Cup Soy Sauce
    • 3 tbsp Brown Sugar Packed
    • 1 ½ tsp Cornstarch
    • 1 tsp Ground Ginger
    • ¼ tsp Cayenne Pepper
    • 6 Green Onions Chopped

Instructions

  1. 1In a large bowl whisk together egg and milk.
  2. 2Add bread, let stand 10 minutes, just until the milk is absorbed.
  3. 3Add beef, garlic, pepper, salt and cayenne pepper. Mix thoroughly.
  4. 4Shape into 48 1-inch balls.
  5. 5Heat oil over medium heat. Cook meatballs, half at a time, about 6 minutes per batch, until brown and crusty outside and no longer pink inside.
  6. 6Transfer to covered dish to keep warm. Drain fat and clean skillet.
  7. 7For apple glaze: In a small bowl, combine apple juice, soy sauce, brown sugar, cornstarch, ginger, and cayenne pepper.
  8. 8In same skillet as meatballs were cooked, cook and stir juice mixture until thickened and bubbly (at full boil).
  9. 9Cook and stir 2 minutes more.
  10. 10Return meatballs to skillet; heat through and coat with sauce.
  11. 11Transfer glazed meatballs to serving dish and top with green onions.
