Spinach Artichoke Dip

Ingredients

  • 1 tbsp Olive Oil
  • 2 Garlic Cloves, minced
  • 12 oz Artichoke Hearts Drained and chopped
  • ½ lb Cheddar Cheese Cubed
  • 6 oz Frozen Spinach Thawed and liquid pressed out
  • 8 oz Sour Cream
  • 8 oz Cream Cheese
  • 4 oz Parmesan Cheese Shredded
  • Salt To taste
  • Black Pepper To taste

Instructions

  1. 1Preheat oven to 375°.
  2. 2Heat oil in large pot.
  3. 3Add garlic and cook until fragrant.
  4. 4Add all ingredients, except parmesan, salt, and pepper.
  5. 5Stir over low heat until fully melted.
  6. 6Add parmesan, salt, and pepper.
  7. 7Stir until fully incorporated.
  8. 8Add salt to taste.
  9. 9Pour mixture into a 8x8 baking dish and bake for 30 minutes, or until top is brown.
  10. 10Serve hot with crackers or bread & veggies cut for dipping.
