Whole Wheat Banana Walnut Pancakes with Apple Walnut Compote
Ingredients
Pancakes
- 1 Cup Whole Wheat Flour
- 1 tsp Baking Powder
- 2 Eggs
- ½ Cup Milk
- 2 Ripe Bananas
- 1 Cup Walnut Pieces roughly chopped
- 1 tbsp Butter or Cooking Spray for pan
Apple Walnut Compote
- 2 Granny Smith Apples peeled and diced
- 2 tbsp Water
- 2 tbsp Brown Sugar
- ¼ tsp Cinnamon
- ¼ Cup Raisins
- 1 Cup Walnuts toasted
- Maple Syrup for serving
Instructions
- 1For compote: Heat the oven to 350°.
- 2Toast 1 cup of Walnuts for 8-10 minutes, tossing the Walnuts once, to redistribute. You will know the walnuts are toasted when they are lightly browned and fragrant. Set aside.
- 3In a small saucepan add the chopped apples, water, brown sugar, and cinnamon. Heat on medium for 5 minutes, stirring occasionally.
- 4Remove from heat and add the raisins and the roasted walnuts. Stir to combine. Set aside.
- 5For pancakes: Combine the bananas, milk, eggs, flour, and baking powder. Beat until smooth.
- 6Add the chopped nuts.
- 7Heat a large skillet or griddle on medium heat. Coat the skillet with a small amount of butter or cooking spray.
- 8Spoon 1/4 cup batter at a time onto the griddle. Cook for 1 minute or until you see bubbles around the edges of the pancakes.
- 9Flip and continue to cook for an additional minute.
- 10Remove and serve while hot.
- 11Top with maple syrup and apple compote.
