Whole Wheat Banana Walnut Pancakes with Apple Walnut Compote

Ingredients

    Pancakes

    • 1 Cup Whole Wheat Flour
    • 1 tsp Baking Powder
    • 2 Eggs
    • ½ Cup Milk
    • 2 Ripe Bananas
    • 1 Cup Walnut Pieces roughly chopped
    • 1 tbsp Butter or Cooking Spray for pan

    Apple Walnut Compote

    • 2 Granny Smith Apples peeled and diced
    • 2 tbsp Water
    • 2 tbsp Brown Sugar
    • ¼ tsp Cinnamon
    • ¼ Cup Raisins
    • 1 Cup Walnuts toasted
    • Maple Syrup for serving

Instructions

  1. 1For compote: Heat the oven to 350°.
  2. 2Toast 1 cup of Walnuts for 8-10 minutes, tossing the Walnuts once, to redistribute. You will know the walnuts are toasted when they are lightly browned and fragrant. Set aside.
  3. 3In a small saucepan add the chopped apples, water, brown sugar, and cinnamon. Heat on medium for 5 minutes, stirring occasionally.
  4. 4Remove from heat and add the raisins and the roasted walnuts. Stir to combine. Set aside.
  5. 5For pancakes: Combine the bananas, milk, eggs, flour, and baking powder. Beat until smooth.
  6. 6Add the chopped nuts.
  7. 7Heat a large skillet or griddle on medium heat. Coat the skillet with a small amount of butter or cooking spray.
  8. 8Spoon 1/4 cup batter at a time onto the griddle. Cook for 1 minute or until you see bubbles around the edges of the pancakes.
  9. 9Flip and continue to cook for an additional minute.
  10. 10Remove and serve while hot.
  11. 11Top with maple syrup and apple compote.
